Tasting Notes: Florian Schuhmannn of Quantum harvested very early in the ripe vintage of 2018; this field blend was picked on the second day of harvest, August 17th. This is a fresh white wine, with a green, herbal, resinous and pine-needle laden nose. The touches of VA integrate into the nose providing lift and highlights. The palate is tense, energized by tart pineapple and apricot, crushed rocks – a very delineated, sandy grip. Denser and juicier than you might think, based on the brightness of the nose. Reminds me a bit of Enderle & Molls skin-contact whites. Around 1,000 liters were produced.

Winemaking Notes: The Chaos Weiss is a little different this year in terms of production. The wine is sourced from two vineyards, mostly on granite. This is one of Florian’s oldest vineyards, with vines over 70 years old (it was planted in 1945). In an attempt to balance the elegance and the structure, Florian took about half the grapes, pressed them by foot and macerated everything on the skins for two days. He then pressed this and poured it over the non-pressed grapes (something like carbonic maceration for poor people, says Florian) and let it all sit there for 10 days, after which everything was pressed. The elevage was both old barrel and finished in stainless steel. This is a field blend, with nearly half of the grapes being Weissburgunder and the rest being an assortment of Austrian white varieties. The wine was not fined or filtered; roughly 20ppm S02 added at bottling.
