Vinification: Each grape variety is harvested, crushed and fermented separately in stainless steel tanks at low temperatures. Tirage and second fermentation occurs in the bottle according to the Champagne method. Dama spends a minimum of 18 months on its lees and often longer depending on vintage.
Tasting Notes: Naveran Dama is a masterpiece. The Chardonnay gives the wine body and volume. The Parellada imparts a zesty, bright character that cuts through the buttery roundness of the Chardonnay. Champagne lovers will enjoy this Mediterranean farmer fizz with oysters, raw tuna and sushi. Its fresh acidity complements fruit desserts, especially peaches and sliced oranges.
