History: In 1984, the first Cabernet Sauvignon vines were planted at Isole e Olena. The Cabernet Sauvignon was grafted over old Canaiolo. The resulting wine was quite encouraging, so another 4 hectares were planted. Today, a total of 5 hectares are planted to Cabernet Sauvignon on the Isole e Olena estate.
Vinification: The must macerated on the skins for fours weeks. During this time, delestage and pumping over took place twice a day. After the malolactic fermentation was complete, the wine was racked to barrel. 100% of the wine aged in oak; 40% of the wine aged new oak (French and 2% American). Aging in barrel lasted for 24 months.
Tasting Notes: The Isole e Olena Cabernet Sauvignon shows pure berry and black currant fruit flavors on the palate. The wine is focused with layered expressions of blackberry fruit, vanilla, and minerals. It is savory in flavor, velvety in texture with firm yet supple tannin and a slight cedar spice on the finish.
