Calvados Pays d'Auge AOP is a fruit brandy created by distilling a cider, which in turn is made from apples harvested from orchards in Normandy (Pays d'Auge) and fermented using traditional methods. The Dupont Calvados Fine has aged 2 years in 400-liter oak barrels, with 50% of new oak.

Production Notes: The apples are mixed, crushed, and pressed. The apple juice is fermented to cider to be distilled. Cider destined to become Calvados is aged six months on its lees to enrich its aromatic expressiveness. Double distillation is carried out one month after the fermentation has taken place. The first distillation gives the "petite eau" at 30% by volume. It is the second distillation where the "petite eau" creates Calvados.

Tasting Notes: The nose is fine, complex, and very intense with aromas of apple, pear, vanilla and citrus with earthy hints. It is round and fresh on the palate showing vanilla and dried fruits. A well integrated whole with good intensity. Drink as an aperitif: on its own, over ice, or with a drop or two of water to let it release its aromas. Use it in cooking for flambé or sorbets or granita; it is very gastronomic. In addition, it accompanies dark chocolate and fine cigars.
