Winemaking Notes: The grapes come from manually harvested vines ranging between 10-30 years old in the Austrian wine appellation of Neusiedlersee in Burgenland. The grapes macerate for 5-7 days on their skins, followed by spontaneous fermentation in stainless steel with indigenous yeast. The wine ages sur lie for 4 months in stainless steel. It is not filtered or fined before bottling.
