Vineyard Notes: Xarel-lo and Bastard Negre are co-planted in the 1.92-hectare Clos del Serral plot. The vines were planted in 1954. The plot is dry farmed without any machinery. Hispanic Breton horses are used for plowing.

Winemaking Notes: The grapes were manually harvested using 15 kilo baskets. Then they are further sorted grape by grape by hand. Fermentation occurred with the yeast indigenous to the vineyard in stainless steel and cement. Fermentation lasted 15 days. The wine aged in tank for 11 months before being bottled. Then, the wine aged horizontal on its lees for 100 months (Bottling date August 31th, 2021). It was disgorged without the addition of sulfites.

"A light to medium bronze-gold in the glass with medium bubbles, this wine smells of butterscotch and pears. In the mouth, a velvety, but fading mousse delivers flavors of baked apple, citrus peel, and a hint of wet chalkboard. The finish is pithy with a hint of dried herbs. Good acidity and a nice savory complexion. This 4.75-acre vineyard was planted in 1954 and features deeply fossilized calcareous marl soils. It is a field blend of Xarel-lo and Bastard Negre. Disgorged in September 2021."

    I loved the complexity and nuance of the 2010 Mas del Serral that I tasted next to the 2011 and 2012. This had the advantage of time and developed great aromatic, spicy notes of curry and an herbal touch of celery, deep flavors with pungent notes that last for a very long time and a creamy texture from the abundant small bubbles. It has a nice compromise between youth and development and power and elegance. It's tasty, finishing with an almost salty twist, and with time in the glass, it developed a peaty and smoky nose that made me think of some Islay malt whisky. 2,047 bottles and 494 magnums produced. All bottles carry the disgorgement date, but this wine always spends a minimum of 100 months in bottle.
