About Hiyaoroshi: Hiyaoroshi is the term used for sake released in the fall without pasteurizing a second time before shipping. Note that hiyaoroshi is technically the same thing as namazume as the second of normally two pasteurizations is foregone. But namazume is a purely technical term whereas hiyaoroshi has a seasonal implication as it is only released in the fall.
