Azuma Rikishi Akiagari Junmai Ginjyo is a cave-aged sake that is charcoal filtered only once prior to bottling to produce a mellow, mildly earthy brew with subtle notes of honey and citrus. Azuma Rikishi Akiagari Junmai Ginjyo is a fall release sake that is produced in spring, conditioned over the summer, bottled and released in fall. Akiagari refers to sake that is pasteurized for the second time after summer aging and distributed in the autumn. Aki means autumn.
