Vineyard Information: Vineyards are located on the Gipuzkoa Coast with the Cantabrian Sea to the north. The winery and vineyards are established on the gentle, rounded hills, which stand 90 meters above sea level and come to an abrupt halt at the coast. In order to avoid high humidity related problems, the vineyards are located on the sunniest, windiest slopes with good drainage. Vineyards are not irrigated.
Winemaking Notes: Harvest is manual. Fermentation occurs in stainless steel with indigenous yeast. Malolactic fermentation occurs in stainless steel. The wine rests on its lees until bottling. It is bottled while young to capture some of the natural CO2 left in the wine, which gives it a slight effervescence.
Tasting Notes: This young, very dry white wine, unique to the Basque Country, has subtle and delicate aromas on the nose with lively acidity on the palate. It's like watching the sea lands that produce it: slightly acidic, carbonic and fresh.

Serving Notes: The traditional way of serving it is to pour it from a great height into a glass, so it froths and splashes around festively. This is done to ensure that, together with the small carbonic bubbles, the fruit and whole range of fruity aromas are shown in the glass.
About Getariako Txakolina: Located in Spain’s Basque Country, this region generally produces white wine that shares affinities with Vinho Verde of Portugal. These wines are usually sold young, slightly sparkling, and low in alcohol, and are called Txakoli. The variety comes from a small region around the towns of Getaria, Zarutz, and Aia. Getariako Txakolina is the principal appellation of this region, but is still one of Spain’s smallest DOs. Around 900,000 liters are produced per year, mostly on southeast facing slopes to protect the vines from the harsh Atlantic weather. Unlike the other varieties which are grown as most varieties of grapes, the grapes for this Txakoli are cultivated at a greater height above the ground, with the foliage forming a contiguous canopy to improve the microclimate.
