Winemaking Notes: Making Vin Santo is a painstaking process. Individual bunches of Malvasia and Trebbiano are manually harvested early to preserve acidity and then either hung to dry or placed on wooden mats to dry until sugar levels reach the desired point. Isole e Olena uses bamboo mats for drying; the grapes dry for 3-5 months. The dried grapes are then pressed. The thick must is placed in oak and chestnut barrels of varying size that are filled three-quarters full. Fermentation initiates with a dose of “mother” Vin Santo. Then the barrels are sealed with wax and left unopened for 6 years in the “vinsantaia,” the designated Vin Santo room usually in the attic. However, Paolo de Marchi moved his Isole e Olena's vinsantaia to the ground floor in 1991. Although it forgoes tradition, he believes having the barrels closer to the cool ground helps preserve acidity and prevent a “cooked” taste to the wine. The Vin Santo is left in contact with its lees, neither racked nor filtered, during the aging process. As the Vin Santo ferments and ages, much of the wine evaporates through the porous, old barrels. As a result, the Vin Santo is essentially a fully-oxidized wine.

Tasting Notes: Orange marmalade, toffee, apricots, honey, vanilla notes on a luscious palate. It’s golden amber in color with a fresh finish.

"The 2008 Vin Santo del Chianti Classico is fabulous. Rich, deep and exotically beautiful, the 2008 has so much to offer. Ten years in small casks yielded a Vin Santo loaded with personality, complexity and character. Orange confit, burnt sugar, dried herbs, spice and caramel are some of the many notes that lift out of the glass. A touch of Petit Manseng (unusual in Vin Santo) helps brighten the acids. If I had to pick only one bottle to demonstrate what Vin Santo is all about, it might very well be Isole e Olena's 2008, as it is a real reference-point of both excellence and pedigree."

"Thickly textured and bursting with honey, hazelnut torte, butter and nutty flavors, this is saturated and searing from vivid acidity. Everything is harmonious, and this lingers for what seems like a minute on the finish. Difficult to stop sipping. Drink now through 2033."

    The 2007 Vin Santo del Chianti Classico (375-milliliters) aims high in terms of residual sugar (at 215 grams per liter), but you'd hardly know. This dessert wine shows great integration with sweet notes of candied fruit, honey, caramel and almond marzipan. There are floral notes as well with jasmine and honeysuckle, but you also get dusty mineral tones and some herbal notes tucked in at the back. This is a medium-bodied wine with enough balanced acidity to keep it light, tonic and refreshing. As always, Isole e Olena produces one of the most elegant and ethereal Vin Santos in Chianti Classico.

    A wine of grace and stature, the 2007 Vin Santo is gorgeous. There is plenty of texture and plushness that is typical of the year, and yet the wine has more than enough acidity to play off the caramel, burnt sugar, dried cherry and floral notes. The wine's midweight, understated style belies the 217 grams of residual sugar.
