Sawanoi is a celebrated brewery. Founded in 1702, Sawanoi has been crafting sake for over 300 years. It is the oldest sake brewery in the Tokyo Prefecture. It is located near the border between Ome City and Okutama, which is an area deep in the mountains that abounds with natural beauty. The brewery utilizes the exceptional water that flows through the canyons, and, in fact, Sawanoi is named after the Sawai area, which is known for its clear water.

The brewery's mantra is that progress is the lifeline of brewing; there are no absolutes, this year's sake will/must be better than last's, next year's better than this year's, so forth eternally.

Mikio Ozawa, current CEO, is the 23rd generation to run Sawanoi.
